材料: 4根排骨的牛肋排一个(Costco买的, 大约七磅?86美刀)
调味料: 盐,胡椒粉 (可根据喜好加蒜盐或味盐)
1- (3 or 4 rib) rib roast(about 7 lbs.), tied with kitchen twine at both ends. Salt & pepper
带3-4根排骨的牛肋排一个。 用厨用棉线将两边栓牢,撒上盐和黑胡椒粉
- An hour before cooking, remove roast from refrigerator to bring it to room temperature.
烤之前一个小时将牛肋排从冰箱里拿出来让它会到室温温度
- Adjust over rack to lowest position and heat oven to 250 degrees. .
将烤箱内的铁网移到最下面一层后把烤箱调到250华氏度预热。
-Set at med-high heatHeat large, heavy bottomed roasting pan over two burners, Place roast in hot pan and brown on all sides, 6-8 minutes.
长形烤盘(我的烤盘不够厚,改用煎锅煎)放在同时开火的两个炉头上,用中高火将牛肋排的每一面都煎香, 大约6-8分钟
- Remove roast from pan. Set wire rack in pan and set roast on rack. Generously season with salt & pepper.
将煎好的牛肋排放进烤盘的烤架上, 再往牛肋排上撒满盐和黑胡椒粉
- Place roast in oven until meat registers 130 degrees (for med-rare), 3-3-1/2 hrs. Remove roast from oven and tent with foil for about 20-30 minutes.
将牛肋排放进预热好的烤箱烤至牛肋排130华氏度(生到中熟的程度),大约3到3.5小时左右(怕生的可以烤的时间长一点)。 这时候用一块锡箔纸盖在牛肋排上再烤20-30分钟。
- Remove twine and set roast on carving board with ribs at 90 degrees, cut along bones to remove. Serve immediately.
将棉线拆开, 待牛肋排降温到差不多90华氏度的时候切片上碟,即切即吃,凉了不好吃。
*** If its a special occasion, get the "Prime" prime cut roast. Ribs from the loin or short end, ribs # 9-12 if you are not ordering the entire 7 rib roast. This is
usually about $18/lb. You may have to special order them from a butcher shop. Costco only has them during Thanksgiving & Xmas.
